The vineyards sit at around 720 metres in loose sandy volcanic soils of ash and lapilli, which drain freely and hold almost no water.\u003c\/p\u003e\u003cp\u003eCarricante gives the wine its spine of acidity, Catarratto its breadth and perfume. Picking is by hand in the second week of October.
