The vines, 25 to 60 years old, grow at 150 to 200 metres facing south and south-east, on iron-rich clay over marine limestone.\u003c\/p\u003e\n\u003cp\u003eThe grapes are picked by hand, gently destemmed and fermented in temperature-controlled vats with a long maceration on the skins; the wine then matures for about a year, partly in barriques.
