It is mostly Vermentino with a little Albarola.\u003c\/p\u003e\n\u003cp\u003eThe grapes are picked by hand in September, in two passes as the different plots ripen. After short macerations and long, gentle pressing, the must settles naturally and ferments at controlled temperature; the wine then spends about four months on its lees in steel and is bottled in February to keep its fruit.
