This dessert wine is 100% Melnik 55, a local selection derived from Shiroka Melnishka Loza. The grapes are picked in early November when overripe and slightly shrivelled, then dried further on wooden racks in a ventilated room, following the Italian passito method.\u003c\/p\u003e\u003cp\u003eFermentation takes place in Bulgarian oak barrels and is stopped by cooling, without adding spirit, followed by two years of ageing in oak. Only around 1,200 bottles were made.
