The vines sit at around 700 metres in sandy volcanic soils of ash and lapilli, free-draining and poor, which keeps yields naturally low.\u003c\/p\u003e\u003cp\u003eThe grapes are picked by hand in October and fermented in stainless steel, with no oak at any stage, so that the clean fruit and the mineral signature of the volcano come through undisguised.
