The vines, around 25 years old, grow in clay soil and are trained on spurred cordon at 5,000 plants per hectare.\u003c\/p\u003e\u003cp\u003eMade from 100% Nero d'Avola, the grapes are selectively harvested and macerate on the skins for 18 days, with temperature-controlled fermentation and malolactic fermentation in steel.
