Buvoli

Buvoli is a small Italian producer of traditional-method sparkling wine, with a focus on Pinot Nero. Its bottles are released under the name Opificio del Pinot Nero, which roughly translates as the Pinot Noir workshop, a title that hints at a hands-on, craft approach to bubbles.

The bottle available at WineTime is Metodo Classico Tre, an Extra Brut VSQ. Extra Brut means very little added sugar, so the wine is dry, crisp and precise, designed to show the character of the grape and the long contact with the yeast. It works as an aperitif and with oysters, fried seafood and cured meats.
