Gin "No. 209" - Distillery No. 209 [1 L]

No. 209 is the gin of Distillery No. 209 in San Francisco, made in small batches with eleven-hour distillation cycles. Each batch of botanicals is first tested in small stills to check its intensity and character.

The base spirit comes from four column distillations of Midwest corn, smooth with an almost sweet finish, and the water from Sierra Nevada snowmelt; the botanicals macerate overnight in a copper still before a fifth distillation. A traditional yet modern gin, here in the 1-litre bottle.
