Tasting notes
Pale straw yellow with a fine, persistent bead. The nose is driven by lemon zest, green apple and white flowers, with a bready note from the time spent on the lees. The palate is taut and dry, Ribolla's acidity giving real drive, and the finish is clean, saline and long.
About this wine
Collavini has been making sparkling wine in Friuli since 1973, when Manlio Collavini introduced the method to a region then known almost exclusively for still whites. The family has farmed here since 1896 and works from a sixteenth-century villa at Corno di Rosazzo.
This Millesimato is the ambitious end of that line: a Brut made entirely from Ribolla Gialla, the native white grape of the eastern Friulian hills, drawn from a single harvest rather than blended across years. Ribolla's naturally high acidity and low-key aromatics make it unusually well suited to sparkling wine, giving structure without the tropical weight that fuller varieties can bring.
It is a Friulian sparkler with a clear sense of place rather than an imitation of anywhere else.
