How to serve it
Tasting notes
Pale gold with a fine, persistent mousse. Lemon zest, green apple and white flowers on the nose, with crushed chalk, oyster shell and a hint of toasted bread. The palate is tight and vertical, its fruit secondary to a stony, saline drive and bright acidity. The finish is dry, mineral and long, leaving flint and citrus rind.
About this wine
Minéral is Pascal Agrapart's Blanc de Blancs from two parcels of almost pure chalk, Les Champs Boutons in Avize and La Fosse in Cramant, where the soil is thin and the rock close to the surface. Both are Grand Cru sites in the heart of the Côte des Blancs.
The wine ferments in oak barrels without malolactic conversion, ages on its lees for several years and is disgorged as Extra Brut with a very small dosage. Where the estate's clay-grown cuvées are broad, this one is linear and taut.
Chalk translated into Champagne, and a fine introduction to Agrapart's style.
