How to serve it
Tasting notes
Straw yellow with golden lights. The nose moves from ripe golden apple and white peach toward hazelnut and a faint buttery note. The palate is broad and textured yet firmly dry, a stony, almost flinty undertone running beneath the fruit, with good acidity carrying a long and gently nutty finish.
About this wine
Wine-growers since 1896, the Collavini family works from a sixteenth-century villa at Corno di Rosazzo, on the Friulian side of the Collio hills.
"Sassi Cavi" is the estate's Collio Chardonnay, and the name points at the ground it grows on: the quarried, stony marl of these slopes, poor in organic matter and quick to drain, which holds yields down and concentrates what the vine does ripen. Collio lies close enough to the Adriatic to catch the sea breeze, while the Julian Alps shelter it from the north — and that daily swing between warm afternoons and cool nights is what gives Friulian Chardonnay its definition.
The style is Friulian rather than Burgundian: fruit and minerality first, oak kept well in the background.
