Tasting notes

Golden colour with very fine bubbles. Aromas of ripe fruit and spice, baked apple, compote and peach. The palate is balanced, long and lively, with a velvety mousse and notes of pear, brioche, spice and fresh walnut leading to a persistent finish.

About this wine

Special Cuvée is the emblematic non-vintage Champagne of Bollinger, the house of Aÿ. The blend is 60% Pinot Noir, 25% Chardonnay and 15% Meunier, with more than 85% of the grapes coming from grand and premier cru vineyards.

A large share of the blend is made up of reserve wines, some of them kept in magnums for between seven and fifteen years under cork. The wine then matures in the cellar for twice the minimum required by the appellation and receives a dosage of 7 to 8 grams per litre.

In magnum the Special Cuvée evolves more slowly and gains extra finesse, making it the ideal format for celebrations and larger gatherings.
