Tasting notes

Bright straw gold. Lemon curd, white peach and acacia on the nose, with crushed chalk, a touch of hazelnut and a saline edge. The palate is fuller and rounder than village Chablis, its ripe citrus carried on a creamy lees texture and firm acidity. The finish is long and stony, closing on grapefruit pith and flint.

About this wine

Vaillon lies on the left bank of the Serein, facing south-east across the valley from the Grand Crus, and is one of the larger and most reliable Premier Crus of Chablis. Christian Moreau Père & Fils farms a parcel here on classic Kimmeridgian marl.

The fruit is pressed gently and fermented in stainless steel, with a small portion of the blend raised in older oak barrels to add texture rather than flavour. The wine then rests on its lees before bottling, which gives it breadth without blunting the appellation's cut.

A clear step up in depth and length from village Chablis, and a fine match for seafood.
