Tasting notes

Bright pale gold. A lively, slightly spicy nose of fresh apple, lemon zest and wet stone. The palate is full and rich yet fresh, with crisp apple fruit, a medium-full body and pronounced minerality leading into a long, clean finish.

About this wine

Chablis Premier Cru "Vaillons" comes from Domaine Jean-Paul & Benoît Droin, a family estate that has tended vines in Chablis for almost 400 years. Today the fourteenth generation farms some 13 hectares and makes 14 wines.

Vaillons is a left-bank Premier Cru with vines of around 45 years planted on Kimmeridgian limestone. After pneumatic pressing and natural settling, the juice ferments with indigenous yeasts partly in stainless steel and partly in barrel, completes malolactic fermentation and rests 8–10 months in steel.

It is a 100% Chardonnay with a lively, stony character, produced in about 35,000 bottles a year and capable of ageing for more than ten years.
