How to serve it
Tasting notes
Bright gold with green highlights. An expressive nose of white peach, candied lemon, hazelnut and crushed oyster shell, with a discreet toasty note from the old barrels. Full and layered on the palate, the fruit carried by firm chalky acidity, closing on a long saline finish of flint and citrus peel.
About this wine
Jean-Paul & Benoît Droin is one of the oldest growing families in Chablis, with vines documented in the family's hands since the seventeenth century. The domaine farms a remarkable set of premier and grand cru parcels around the town of Chablis itself.
Vaudésir sits at the heart of the grand cru hillside, in a sheltered south-facing fold that concentrates ripeness while the Kimmeridgian limestone keeps the wine tense. Droin raises part of the wine in old oak barrels and part in stainless steel, so the wood frames the fruit without covering the chalk.
The result is a Chablis built for the long term: broad and generous at first, then tightening onto the saline mineral core the site is known for.
