Tasting notes

Pale straw yellow, with fine bubbles that rise slowly into a lasting mousse. The nose is fresh and floral, with white fruit and a light biscuit nuance. The palate is delicate, on apple and pear, with gentle acidity and a light, springlike finish.

About this wine

Billecart-Salmon is a family Champagne house founded in 1818 at Mareuil-sur-Aÿ, near Épernay, and still run by the founding family.

Brut Réserve is the house's classic non-vintage Champagne: a blend of three varieties — forty per cent Pinot Meunier, thirty Pinot Noir, thirty Chardonnay — and three harvests, with an unusually high proportion of reserve wines, between fifty and sixty per cent. Fermentation is in stainless steel and the wine spends thirty months on its lees.

It is the bottle that built the house's reputation for a delicate, finely drawn style rather than power.
