Tasting notes

Straw yellow with greenish highlights. The nose is floral and fruited, yellow peach and medlar with a touch of acacia honey. The palate is elegant and broad, full in texture without weight, and lively acidity carries it to a finish of good length.

About this wine

The Caeles Viognier is grown under certified organic farming at Firriato's Dagala Borromeo estate, in the agricultural country around Trapani in western Sicily. The vineyards face south on hillsides at 310 metres, in predominantly clay soils.

Picking is by hand in the last week of August, followed by a gentle pressing. The wine spends three months on its fine lees in stainless steel, stirred daily, then a further three months in bottle before release.
