Tasting notes

Intense straw yellow with greenish highlights. The nose carries white flowers, broom, aromatic herbs and white peach over a fine smoky note. The palate is direct and alive, the acidity balanced against a rounded body, and the finish is dry, saline and long.

About this wine

Cavanera Ripa di Scorciavacca is Firriato's single-vineyard white from Contrada Verzella, on the north-eastern flank of Etna. The vines grow between 600 and 750 metres, facing south, in free-draining volcanic soils where the day-night temperature swing is wide.

Picking is by hand in October. The fruit goes through a cold maceration before a gentle pressing, and the wine then spends six months on its lees in stainless steel, stirred daily, which builds texture while keeping the volcanic cut intact.
