Tasting notes

Light straw yellow. The nose is floral, with hints of wormwood and exotic fruit. The palate is fresh, fruity and well balanced, with a clean texture and gentle acidity carrying through to a crisp, pleasantly persistent finish.

About this wine

The Collavini family has been making wine in Collio, Friuli, since 1896. "Dei Sassi Cavi" is their Chardonnay from the Collio DOC, grown on the hillside vineyards of this north-eastern corner of Italy.

After harvest the must rests overnight on the skins at 12 °C to draw out aroma, then ferments in stainless steel tanks. This approach preserves the freshness and fruit-driven character of the variety, without the weight of oak.

The result is a bright, balanced white of around 13% alcohol, true to the elegant style of the Friulian hills.
