How to serve it
Tasting notes
Pale gold with green highlights. Aromas of pear, white flowers and citrus peel mingle with almond and a light buttery note. The palate is supple and generous on entry, then tightens around a chalky mineral core, with fine acidity carrying the wine to a clean, persistent finish marked by lemon and toasted hazelnut.
About this wine
Mademoiselle is the white cuvée that Jean-Marc Joblot named for his daughter Juliette, who now works alongside him and her uncle Vincent at the family estate in Givry. It comes from Chardonnay planted on the Premier Cru slopes of the Côte Chalonnaise.
The fruit is whole-bunch pressed and fermented in oak, then aged on its fine lees with regular bâtonnage. The estate uses only a modest proportion of new barrels, so the wood frames the wine rather than flavouring it, leaving the chalky character of the soil in the foreground.
A supple, finely balanced white Burgundy with genuine ageing potential.
