Tasting notes

Deep golden colour with a fine, persistent bead. The nose shows honey, freshly baked croissant, yeast, vanilla and tropical fruit. The palate is distinctly dry and clean, yet velvety from the long lees ageing, with a near-endless finish. Deep, complex and lingering.

About this wine

DOM is the top Riserva of Mirabella, the family-run Franciacorta house founded in 1979, which farms around 45 hectares of organic vineyards. This 2016 vintage is a Dosaggio Zero, bottled with no added sugar.

Chardonnay (60%), Pinot Noir and Pinot Bianco are pressed separately within three hours of harvest. The free-run must ferments 70% in concrete vats and 30% in oak barrels, and the wine then ages for at least 85 months on its lees in bottle.

Deep, velvety and remarkably long, it is a Franciacorta of great complexity and a wine for special occasions.
