Tasting notes

Straw yellow with slow, very fine bubbles. The nose is clean and precise: white stone fruit, spring flowers and a delicate biscuit note from the lees. The palate shows apple, crisp pear and citrus with a toasted edge, a fine texture, and a long finish that is fresh and markedly mineral.

About this wine

The family house of Billecart-Salmon was founded in 1818 in the village of Mareuil-sur-Aÿ and is still in the hands of the founders' descendants. Le Réserve is its non-vintage flagship, a blend of the three Champagne varieties in which reserve wines make up more than half.

Fermentation is slow and cold, largely in stainless steel, the technique that gives the house its clarity of fruit. The wine then spends an average of fifty months on the lees before disgorgement, finished with an extra brut dosage that leaves the structure bare. The half bottle is an easy pour for two.
