Tasting notes

Pale straw. Gooseberry, grapefruit and lime zest on the nose, with notes of box hedge and fresh-cut grass. The palate is dry and taut, with zesty acidity, light citrus flesh and a crisp, herbal finish. Clean and bracing.

About this wine

Moulin de Gassac draws on growers across the Hérault, selected and vinified under the direction of Mas de Daumas Gassac, the estate that first showed what the Languedoc hinterland could do.

The Sauvignon Blanc is harvested at night to protect its aromatics, pressed whole-bunch and fermented cool in stainless steel. Malolactic fermentation is blocked and the wine sees no oak, which keeps the variety's cut intact.

It is a southern Sauvignon with more flesh than a Loire example but the same bracing finish.
