Tasting notes

Pale straw with faint green reflections. The nose is delicate and floral, with lemon peel, green apple and a hint of acacia blossom. The palate is lean and nervous, bright acidity carrying a saline, almost chalky undertone through a clean, moderately long finish that leaves the mouth fresh and ready for the next sip.

About this wine

Volpe Pasini is one of Friuli's historic estates: a villa dating from 1596 at Togliano di Torreano, surrounded by some 52 hectares of vineyards spread across the Togliano and Prepotto hills in the Colli Orientali.

Ribolla Gialla is the native white grape of these hills, and Volpe Pasini treats it with deliberate restraint. The fruit is pressed gently, fermented in stainless steel under controlled temperature, then left to settle in bottle before release. Nothing is placed in the way of the variety's nervous, mineral character.

The result is a white built on tension rather than weight, at its best drunk young while the citrus and white-flower lift is brightest.
