Tasting notes

Bright straw yellow. The nose opens on the variety's green signature — nettle, boxwood, elderflower — then fills out with yellow peach and grapefruit. The palate is rounder than the aromas suggest: soft and elegant in texture, with fresh acidity and a gently bitter almond note closing a persistent, clean finish.

About this wine

From its villa of 1596 at Togliano di Torreano, Volpe Pasini farms around 52 hectares on the Togliano and Prepotto hills, among the most reliable white-wine ground in the Colli Orientali del Friuli.

Sauvignon Blanc has long been at home here, and this bottling shows why. Fermentation in stainless steel preserves the variety's aromatic drive, while the clay-and-marl soils of the hillsides lend a breadth and softness that keeps the wine from turning shrill. Production runs to roughly 13,000 bottles a year.

It drinks beautifully young, yet has the structure to develop over seven or eight years in a cool cellar.
