How to serve it
Tasting notes
Deep ruby with purple highlights. The nose leads on black cherry and plum, with dried herbs, black pepper and a touch of liquorice behind. The palate is medium to full, firmer and more savoury than most Pugliese reds, the tannins fine-grained but present, and the finish is dry with a pleasantly bitter twist.
About this wine
Cantine Due Palme works from Cellino San Marco in the Salento, pooling the fruit of a large number of small growers across Puglia — a structure that gives the cooperative access to old vineyards no single estate could farm alone.
"Priamo" is its Nero di Troia, a variety native to northern Puglia and long overshadowed by Primitivo and Negroamaro further south. Nero di Troia ripens late and keeps a firmer tannic frame and higher acidity than its Pugliese neighbours, which makes it the most structured of the region's three main reds rather than the softest.
Bottled under the broad Puglia designation, it is built for the table rather than the cellar.
