Tasting notes

Straw yellow with greenish reflections. The nose is floral, mimosa and broom flower, with white peach and ripe pear behind. The palate is dense and fresh at once, the volcanic soil showing as a firm mineral line, and the finish is long and distinctly saline.

About this wine

Le Sabbie dell'Etna Bianco is Firriato's volcanic white, grown at the Cavanera estate on the north-eastern flank of Etna. The vineyards sit at around 720 metres in loose sandy volcanic soils of ash and lapilli, which drain freely and hold almost no water.

Carricante gives the wine its spine of acidity, Catarratto its breadth and perfume. Picking is by hand in the second week of October. After fermentation in stainless steel the wine stays about three months on its lees, stirred daily, before bottling.
