Tasting notes

Pale gold with green glints. Fruity, mineral and elegant: the limestone brings finesse, the clay adds fruit and density, and the flint gives structure and a subtle smoky edge. The palate is crisp and precise, with fresh acidity and a long, mineral finish.

About this wine

Pascal Jolivet is one of the leading names of the Central Loire, working exclusively with Sauvignon Blanc from Sancerre and Pouilly-Fumé.

Sancerre "Signatures" brings together three soil types – limestone, clay-limestone and flint (silex) – which are vinified separately. The grapes are handled by gravity, only the free-run juice and the first pressing are used, and fermentation proceeds slowly with native yeasts in temperature-controlled steel tanks.

The result is a Sancerre that combines finesse, fruit and structure, with the potential to age for up to ten years.
