Tasting notes

Pale straw yellow with green tints. The nose is elegant rather than exuberant, with delicate floral notes, exotic fruit and citrus. The palate is warm, enveloping and well structured, with hints of mint and nettle and a distinctly saline thread that carries the finish.

About this wine

Schiopetto is a historic estate in Capriva del Friuli, founded by Mario Schiopetto in 1965 and run by the Rotolo family since 2014. Sauvignon has been part of the range since 1972 and comes from hillside vineyards on cool, clay-rich soils that slow ripening and keep the variety's aromatics in check.

The grapes are pressed gently, settled without added sulphur dioxide and fermented in stainless steel with indigenous yeast at controlled temperature. Eight months on the lees follow, giving a Sauvignon built on texture and salinity rather than the loud green notes the grape can produce elsewhere.
