How to serve it
Tasting notes
Bright ruby red. The nose offers ripe cherry, wild strawberry and red berries with hints of forest floor, dried herbs and sweet spice. The palate is warm and juicy, with soft, finely grained tannins, lively Sangiovese acidity and a long, savoury finish.
About this wine
Salvioni, also known as La Cerbaiola, is a small family estate in Montalcino that released its first Brunello in 1985. Its vineyards lie in three parcels at 420 to 440 metres above sea level, with vines between 10 and 25 years old.
This Rosso di Montalcino is made from 100% Sangiovese, picked by hand from very low yields. Fermentation starts naturally and lasts about four weeks in the cellar beside the vineyards, without temperature control, and malolactic fermentation follows spontaneously. The wine then ages in medium-toasted Slavonian oak casks and rests 12 months in bottle before release.
The 2017 shows forest-floor aromas with red fruit and ripe cherry, soft tannins and a long finish, an artisanal expression of Montalcino Sangiovese.
