Tasting notes

Pale ruby, almost translucent. The nose offers wild strawberry, rose petal and white pepper, with a dusty, earthy undertone. The palate is light in body but firm, with grippy tannins, high acidity and an unmistakably dry, slightly bitter close. Refreshing and persistent.

About this wine

The Cavallotto family has worked the Bricco Boschis amphitheatre in Castiglione Falletto for four generations, farming organically and relying on native yeasts and long, patient cellar work.

Grignolino is one of Piedmont's old regional varieties, pale in colour yet high in tannin and acidity. Cavallotto grows it on the cooler parcels of the estate and ferments it in stainless steel with a short maceration, bottling it young to preserve its aromatic lift.

It is a light-bodied, strikingly dry red that behaves more like a structured white at the table.
