Tasting notes

Deep, dense ruby red. The nose shows blackcurrant and ripe dark fruit, with cedar, bell pepper and a hint of tobacco and cocoa from the oak. The palate is full-bodied and warm, with rounded, fine tannins, good freshness and a long, persistent finish of black fruit and spice.

About this wine

Doss is the Cabernet Sauvignon Riserva of Cantina Girlan, the cooperative winery of Cornaiano (Girlan) in South Tyrol. The grapes come from the warmest sites the winery farms: parcels in the Oltradige area at around 400 metres and in the western part of the Bassa Atesina at about 300 metres, where the variety reaches full ripeness.

The grapes are picked by hand and fermented with careful extraction. The wine then ages for 18 months in a combination of large oak casks and barriques, followed by a further six months in bottle before release.

The long ageing gives Doss structure and depth while keeping the alpine freshness typical of Alto Adige reds, a Cabernet with real cellaring potential.
